Kitchari (Mung Dhal & Millets with Ayurveda Indian Spices)

Description:

Kitchari has been described as the perfect meal in Ayurveda. It is:

  • Easy to digest, soothing, healing, and cleansing

  • Full of essential minerals, vitamins, and amino acids

  • A highly nutritious and complete meal

Kitchari is tridoshic, which means it is suitable for all Ayurvedic body types.


Ingredients

  • Organic Millets

  • Organic Mung Dhal

  • Organic Spices (Cumin, Coriander, Ginger, Fennel, Turmeric)

  • Himalayan Salt

No additives or preservatives


Directions

  1. Shake the packet well to evenly mix the spices, millet, and mung dhal.

  2. Heat 1 tablespoon of your preferred oil (e.g., Ghee, Coconut Oil (vegan), Sesame Oil, Mustard Oil, or Olive Oil).

  3. Sauté the Kitchari mix (100g) for 1 minute.

  4. Add 4–6 cups of water, cover with a lid, and bring to boil.

  5. Reduce the heat and let it simmer for 30–40 minutes, stirring occasionally, until the mixture is soft.

Optional for more flavor:

  • Add finely chopped vegetables such as carrots, green beans, broccoli, or zucchini while it simmers.

  • Garnish with fresh coriander, chilies for extra heat, yogurt, and a squeeze of lemon juice.
